Emily’s “Bear Crackers”

Preferring a healthier alternative to the boxed brands on the grocery store shelves, I discovered this method for a homemade delicious graham snack my kids simply loved.



1 1/2c all purpose flour
1 1/2c whole wheat flour
1/2tsp baking soda
1 tsp baking powder
3/4tsp salt
3/4tsp cinnamon
1/2tsp fresh ground nutmeg
1/2c butter
1/3c honey
1/3c brown sugar
1/2c heavy cream
1/3c coarse sugar for sprinkling on top
Preheat oven to 350
Combine dry ingredients in a bowl then set aside. In a clean bowl add sugar butter and honey mix until pale and fluffy. Add dry ingredients to butter sugar mixture alternating with heavy cream until you get a dough. Cover and place in refrigerator for 30 minutes or overnight. Then roll dough 1/8 to a 1/4inch thick and cut into rectangles. Using a wooden skewer Lightly imprint horizontally and vertically on the rectangle cut dough. Take a fork or wood skewer and poke small holes to give your crackers that classic look.
On a parchment-lined baking sheet, Sprinkle crackers with coarse sugar then place into 350° oven for 12 to 15 minutes or until edges start to brown.
